3. Stretched Curd Cheeses

Originally produced in Italy, the distinguishing characteristic of these cheeses is the working of the curd to a plastic, stretchy state in hot water and/or whey and then stretching them to be moulded into various shapes.

Heating the curd reduces the moisture content and kneading develops stretch. The hot, soft cheeses are then submerged in cold water, at which point they harden and can retain their shape.

These cheeses melt wonderfully when reheated and you probably cannot imagine a pizza without a wonderfully stretchy Mozzarella.
